FUDGY MINT CHEESECAKE BARS

CRUST:
4 1 oz bars unsweetened baking chocolate
1/2 C butter
2 C sugar
3 eggs
2 t vanilla
1 C flour

Preheat oven to 350 degrees.  Melt chocolate with butter.  In bowl, combine chocolate mixture with sugar, eggs, vanilla and flour.  Spread in greased 9x13 pan.  Bake 12 minutes.

FILLING:
1 8 oz package softened cream cheese
2 T butter
1 T cornstarch
1 14 oz can sweetened condensed milk
1 egg
1 t peppermint extract
2 drops green food coloring

In a mixer, beat cheese, butter and cornstarch until fluffy.  Gradually beat in sweetened milk then beat in egg, extract and food coloring.  Pour over brownie layer.  Bake 30 minutes or until set.

GLAZE:
1 C semi sweet chocolate chips
1/2 C heavy cream

Melt chocolate chips and cream together and stir until thickened.  Spread over filling and chill.
