MULTI-GRAIN MUFFIN

1 C whole wheat flour
1/2 C flour
1 C oat bran
2 t baking powder
1 t baking soda
1/4 t salt
2 large eggs
1 large egg white
1 1/4 C buttermilk
1/2 C packed dark brown sugar
2 T vegetable oil
1/2 C chopped nuts

Position rack in the center of the oven and preheat to 375 degrees.  Line muffin tin with paper liners.  Whisk flours, oat bran, baking powder, baking soda and salt in medium bowl.  Lightly beat the eggs and egg white in a medium bowl.  Stir in the buttermilk, brown sugar and oil.  Stir the liquid mixture into the flour mixture until just evenly moist; batter will be very thick.  Fold in nuts, saving some for tops if desired.  Fill each paper 2/3 full and bake for 25 minutes.
