ROASTED ASPARAGUS

2 1/2 lbs fresh asparagus
2 T olive oil
1/2 t kosher salt
1/4 t pepper
1/2 C freshly grated parmesan cheese

Pre-heat oven to 400 degrees.  Peel bottom 1/2 of each stalk of asparagus.  Lay them in a single layer on a sheet pan and drizzle with olive oil.  Sprinkle with salt and pepper and mix with clean hands, coating evenly.  Roast for about 15-20 minutes, until just tender.  Sprinkle with cheese and return to oven for another minute.
