SPINACH SALAD (shelly)

1 pkg washed spinach
1/2 lb grated swiss cheese
5 strips cooked and crumbled bacon
1 small, thinly sliced red onion
1/2 C toasted, slivered almonds

DRESSING:
1 C sugar
1 C white vinegar
2 C olive oil
2 T poppyseeds
2 T grated onion
2 t salt
1 t dry mustard
1/2 lb sliced mushrooms

Combine sugar and vinegar then slowly add olive oil.  Add remaining ingredients and chill for 2 hours.
